Healthy White Bean Truffle Dip
- 1 can[15oz] cannellini beans, drained and rinsed
- 1T. fresh lemon juice
- 2 T. olive oil
- 1 small clove of garlic
- 2 T. water[optional]
- 1 tsp. truffle oil
- 1 handful parsley, stems removed
- salt and pepper to taste
Combine all ingredients in a food processor, blend until smooth.
Transfer to a bowl and serve with crudities, crackers or veggie sticks.
