Healthy White Bean Truffle Dip

 

  • 1 can[15oz] cannellini beans, drained and rinsed
  • 1T. fresh lemon juice
  • 2 T. olive oil
  • 1 small clove of garlic
  • 2 T. water[optional]
  • 1 tsp. truffle oil
  • 1 handful parsley, stems removed
  • salt and pepper to taste

 

Combine all ingredients in a food processor, blend until smooth.

Transfer to a bowl and serve with crudities, crackers or veggie sticks.
