Kohlrabi Apple Slaw with Walnut Vinaigrette
Ingredients
- 1 medium kohlrabi,shredded
- 1 firm tart apple,shredded
- ½ cup carrots, shredded
- 1 cup basil, chopped
- 3 Tbsp lemon juice
- ¼ tsp salt
- ½ cup walnuts, toasted
- 2 Tbsp apple cider vinegar
- 1/4 cup extra virgin olive oil
- ¼ tsp salt
- 1/8 tsp pepper
- 2 tsp maple syrup
- 3 Tbsp water
Walnut Vinaigrette
Instructions
Place the walnuts in a dry pan on medium-low heat, stir frequently to toast, set aside to cool.
Combine all salad ingredients, except basil in a large bowl,add lemon juice, salt.
Blend the toasted walnuts with vinegar, olive oil, salt, pepper, maple syrup and water until smooth.
Top salad with dressing and basil right before serving
